Maple Cake with Walnuts is a three-layered gourmet present for all who is lucky enough to be near when the cake is ready!
Total Time to make Maple Cake – 60 min.
Preparing: 45 min. + Baking: 15 min.
Ingredients
- all-purpose flour: 2 cups
- 3 eggs
- butter: 1/2 cup
- brown sugar: 1-1/2 cups
- Viking Farms Maple Syrup: 1 teaspoon
- baking powder: 1 teaspoon
- baking soda: 1 teaspoon
- salt: 1/4 teaspoon
- buttermilk: 1 cup
Candied Walnuts
- butter: 1 tablespoon
- walnuts (coarsely chopped): 1-1/2 cups
- Viking Farms Maple Syrup: 1 tablespoon
- salt: 1/4 teaspoon
Frosting
- butter: 2 cups
- Viking Farms Maple Syrup: 1 teaspoon
- salt: 1/4 teaspoon
- confectioners’ sugar: 5 cups
- half-and-half cream: 1/4 to 1/2 cup
- Viking Farms Maple Syrup: 3 tablespoons (divided for three cake layers)
Instructions
First, turn the oven on and preheat it to 350°. Grease three 9-in. round baking pans and line bottoms with parchment; grease parchment too.
Combine butter and brown sugar until creamy and fluffy. Add 1 egg at a time, beating well after each addition. Then beat maple syrup in.
In a separate bowl, combine dry ingredients: flour, baking powder, baking soda and salt; add to creamed mixture alternately with buttermilk, beating after each addition.
Now, when the batter is ready, transfer it equally to prepared pans. Bake 11-13 minutes or until a toothpick inserted in the center comes out clean. Wait for 8-10 minutes to cool before removing to wire racks. Remove paper and cool completely.
To make candied walnuts, melt butter in a large skillet over medium heat. Saute walnuts about 5 minutes until toasted. Stir in maple syrup and salt. Continue cooking and stirring another minute, after transfer and spread onto foil. Let walnuts cool completely.
For frosting
Beat butter until creamy. Beat in maple syrup and salt. To reach desired taste and consistency, gradually beat in confectioners’ sugar and enough cream.
Take a serving plate and place the bottom layer to form our Maple Cake with Walnuts. Spread 1 cup of frosting, then sprinkle with 1/2 cup candied walnuts and finish with maple syrup drizzling (1 tablespoon). Repeat with two other layers.
Frost top and sides of the Cake and decorate with remaining walnuts and syrup.
